  • 3 large eggs
  • 1 cup unseasoned whole wheat breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

  2. Butterfly and pound the chicken breasts to about ¼ inch thick for even cooking, yielding around six cutlets.
