  • 2 lb boneless skinless chicken thighs (or breasts)
  • ¾ cup pineapple juice
  • ⅓ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced)
  • 3 tbsp brown sugar
  • ⅓ cup ketchup
  • 2 tsp tomato paste
  • ½ tsp red pepper flakes
  • ½ tsp ground nutmeg
  • ¼ tsp chili powder
  • Long grain white rice
  • Avocado slices
  • 3 tbsp chopped fresh cilantro (for garnish)
  • 3 green onions (chopped, for garnish)

Instructions

  1. In a mixing bowl, whisk together pineapple juice, soy sauce, sesame oil, minced garlic and ginger, brown sugar, ketchup, tomato paste, red pepper flakes, nutmeg, and chili powder until well blended.
  2. Place chicken in a resealable bag or shallow dish; pour marinade over it. Seal the bag or cover the dish and refrigerate for at least 20 minutes.
  3. Preheat your cooking method: grill to medium-high heat or oven to 400°F (200°C).
  4. Remove chicken from marinade (discard marinade). Grill for about 6-7 minutes per side or bake on a lined sheet for 25-30 minutes until cooked through.
  5. Serve hot over rice with avocado slices and garnish with cilantro and green onions.
