  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice-cold water
  • 1/4 teaspoon salt
  • 2 cups pumpkin purée (canned or roasted)
  • 1 1/2 cups sliced cremini mushrooms
  • 1 1/2 teaspoons fresh sage, finely chopped
  • 1/4 cup heavy cream
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon freshly ground black pepper
  • Salt to taste
  • 1 tablespoon olive oil (for sautéing mushrooms)

Instructions

  1. Prepare the crust by mixing flour and salt, cutting in cold butter until crumbly. Add ice water and mix until combined. Chill the dough for 20 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the dough, fit it into a tart pan, dock, and pre-bake for 15 minutes.
  3. Sauté cremini mushrooms in olive oil until golden brown; set aside.
  4. In a bowl, whisk pumpkin purée, heavy cream, sage, nutmeg, and seasonings. Fold in the sautéed mushrooms.
  5. Pour filling into the crust and bake for 25-30 minutes until set.
