  • 1 lb Ground lamb (or beef/turkey)
  • 1 small Minced onion
  • 2 cloves Garlic
  • 1 large Egg
  • 1/2 cup Feta cheese
  • 2 tbsp Greek seasoning
  • Salt to taste
  • 1 large European cucumber
  • 1 cup Plain yogurt
  • 2 tbsp Chopped fresh mint
  • 2 tbsp Chopped fresh dill
  • Freshly ground black pepper to taste
  • 2 cups Cooked rice
  • 1/2 juiced Lemon
  • 1 cup Tomatoes
  • 1 cup Diced cucumber

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground meat, onion, garlic, egg, feta cheese, Greek seasoning, and salt. Form into small meatballs.
  3. Place meatballs on a baking sheet lined with parchment paper and bake for 15 minutes until cooked through.
  4. For the tzatziki sauce, mix grated cucumber with yogurt and add mint, dill, salt, and black pepper.
  5. Combine cooked rice with lemon juice and salt.
  6. Assemble bowls with a base of lemon rice topped with meatballs and tzatziki.
