  • Sweet potatoes

  • Cumin

  • Greek yogurt

  • Lime juice

Instructions

  1. Marinate the chicken in olive oil, paprika, cumin, garlic powder, salt, and pepper for 15 minutes.
  2. Preheat the oven to 425°F (220°C). Toss sweet potato wedges in olive oil and spices; spread on a baking sheet.
  3. Grill marinated chicken on medium-high heat for 6-7 minutes per side until cooked through.
  4. Prepare salsa by mixing cherry tomatoes, red onion, avocado cubes, lime juice, cilantro, and salt.
  5. Blend avocado, Greek yogurt, lime juice, garlic, salt & pepper until smooth.
