  • 1 small head green cabbage, finely chopped
  • 1 English cucumber, diced
  • 1 bunch chives, chopped
  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1/4 cup nuts of your choice (e.g., cashews)
  • 1/4 cup nutritional yeast
  • 1/2 tsp Himalayan sea salt
  • 2 TBSP apple cider vinegar
  • 1 15-oz. can chickpeas, drained and rinsed (optional)

Instructions

  1. In a large mixing bowl, combine the chopped cabbage, diced cucumber, chives, basil leaves, spinach, and minced garlic.
  2. In a high-speed blender or food processor, blend lemon juice, olive oil, nuts, nutritional yeast, Himalayan sea salt, and apple cider vinegar until smooth.
  3. Pour the dressing over the salad mixture and toss until evenly coated.
  4. For enhanced flavor, refrigerate for several hours before serving. If desired, top with drained and rinsed chickpeas before serving.
