  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 1 onion, finely chopped
  • 56 garlic cloves, grated
  • 2 cups pureed tomatoes
  • 2 cups onion broth
  • Fresh herbs: oregano, mint, dill

Instructions

  1. Prepare the onions by cutting off tops and bottoms, peeling them, then making a slit down one side. Boil in salted water for 10-15 minutes until softened. Reserve broth.
  2. In a skillet, sauté finely chopped onion in olive oil until soft. Add garlic and cook until fragrant. Incorporate ground beef with seasoning until browned. Stir in tomato puree and rice; add broth. Cook until absorbed.
  3. Stuff the softened onion layers with filling and arrange them seam-side down in a baking pan.
  4. Pour reserved onion broth over stuffed onions and cover the pan.
  5. Bake at 400°F (200°C) for about 45 minutes covered, then uncover and bake an additional 35-45 minutes until tender.
