  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 2 tbsp lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear the chicken until golden brown. Set aside.
  2. In the same skillet, sauté chopped onion until softened, then add garlic and bell peppers until tender.
  3. Stir in diced tomatoes, spinach, orzo pasta, chicken broth, oregano, and basil. Bring to a boil, then reduce heat to low and simmer until orzo is cooked through.
  4. Return chicken to the skillet along with olives and lemon juice; mix well.
  5. Top with crumbled feta cheese and let sit briefly before serving.
