Gourmet Tiramisu Yule Log Cake is a delightful twist on the classic Italian dessert, perfect for festive gatherings and special occasions. This elegant cake features rich layers of coffee-infused sponge cake, filled with a creamy mascarpone mixture, all rolled into a beautiful Yule log shape.

  • 1/3 cup plain flour
  • 1 ½ teaspoons instant espresso
  • 2 large egg whites
  • 5 tablespoons sugar (for egg whites)
  • 3 large egg yolks
  • 2 large whole eggs
  • 3 tablespoons sugar (for yolks)
  • Cocoa powder (for dusting)
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • ¾ teaspoon vanilla extract
  • 2 tablespoons coffee-flavored syrup
  • ½ cup chilled mascarpone cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour and instant espresso; set aside.
  3. Whisk egg whites until soft peaks form, gradually adding 5 tablespoons of sugar until stiff peaks form.
  4. In another bowl, whisk egg yolks and whole eggs with 3 tablespoons of sugar until pale and thick.
  5. Gently fold the flour mixture into the yolk mixture, then fold in whipped egg whites until just combined.
  6. Spread batter onto the prepared baking sheet and bake for about 8 minutes or until lightly golden.
  7. Cool slightly before rolling in parchment paper; let it cool completely.
  8. For filling, beat together heavy cream, confectioners' sugar, vanilla extract, coffee syrup, and mascarpone until well combined.
  9. Unroll the cooled cake carefully, spread with filling, and roll back up tightly without parchment paper.
  10. Chill in plastic wrap for at least an hour before dusting with cocoa powder and serving.
