  • 2 large sweet onions (Vidalia)
  • 6 tablespoons butter
  • 4 cups beef broth
  • 1.5 cups chicken broth
  • 1 tablespoon dry apple vinegar
  • 1 baguette
  • 6 slices Gruyere cheese
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Slice the onions into ¼-inch thick pieces.
  2. Melt butter in a large soup pot over medium-low heat, then add onions.
  3. Cook the onions slowly for about 2 hours until caramelized, stirring occasionally.
