1 pound asparagus
2 zucchinis
2 yellow squashes
6 button mushrooms
3 cloves garlic
2 tablespoons fresh rosemary
2 tablespoons dried parsley
2 tablespoons olive oil
Instructions
Wash all vegetables thoroughly. Trim woody ends from asparagus, slice zucchinis and yellow squashes into thin rounds, chop mushrooms into quarters, and finely mince garlic.
Heat olive oil in a large skillet over medium heat until shimmering.
Add minced garlic and sauté for about 30 seconds until fragrant. Add chopped mushrooms and cook for 3-4 minutes until softened.
Stir in asparagus, zucchini, and squash along with rosemary and parsley. Mix well to combine.
Sauté for an additional 10-15 minutes, stirring occasionally until vegetables are tender yet vibrant in color.
