Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk
  • 1 cup unsalted butter (softened)
  • 2 tbsp all-purpose flour (for butter layer)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 tbsp milk (for egg wash)
  • Confectioners’ sugar (to taste for dusting)

Instructions

  1. Prepare the Dough: In a large bowl, mix flour, sugar, salt, and yeast. Gradually add cold milk while stirring until a dough forms. Knead gently until smooth, then cover and let rise in a warm place until doubled (about 90 minutes).
  2. Incorporate Butter: Roll the risen dough into a rectangle. Beat softened butter with 2 tablespoons of flour until smooth; spread onto two-thirds of the dough. Fold the unbuttered third over and roll out again into a rectangle. Repeat folding twice more.
  3. Shape Croissants: Cut into triangles and place chocolate batons at the wide end. Roll up from wide to narrow to form croissants and place on lined baking sheets.
  4. Final Rise & Bake: Cover loosely and let rise until puffed (30-45 minutes). Preheat oven to 400°F (200°C), brush croissants with milk, and bake for about 20 minutes until golden brown.
