  • 12 slices thinly sliced beef (sirloin or flank)
  • 1 pack enoki mushrooms (divided into small bunches)
  • 1/2 small yellow onion (sliced)
  • 1 cup dashi broth
  • 2 tablespoons mirin (non-alcoholic substitute)
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper
  • 2 large eggs (for garnish)
  • diced green onion (for garnish)
  • sesame seeds (for garnish)

Instructions

  1. Prepare the enoki mushrooms by dividing them into small bunches. Wrap each bunch with a slice of beef.
  2. In a mixing bowl, combine dashi broth, mirin, soy sauce, sugar, and black pepper; mix well.
  3. Heat olive oil in a large skillet over medium heat. Sauté onions until browned and translucent (3-5 minutes).
  4. Place the beef rolls on top of the onions in the skillet. Pour the sauce over them and cover. Cook for about 3 minutes before flipping each roll and cooking for an additional 1-2 minutes.
  5. In another bowl, scramble the eggs and drizzle over the rolls in the skillet. Allow to simmer until cooked through (about 2 minutes).
  6. Garnish with green onions and sesame seeds before serving alongside rice.
