  • 1/2 cup panko breadcrumbs
  • 2 tablespoons Thai red curry paste
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon soy sauce
  • 1 egg (beaten)
  • 1/4 cup cilantro (chopped)
  • 1 tablespoon lime juice
  • 1/4 cup peanut butter
  • 1 tablespoon honey
  • 1 teaspoon red curry paste
  • 23 tablespoons warm water (to thin)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, panko breadcrumbs, Thai red curry paste, minced garlic, grated ginger, soy sauce, beaten egg, chopped cilantro, and lime juice. Mix until well combined.
  3. Scoop about two tablespoons of the mixture and form into balls. Place on a baking sheet lined with parchment paper.
  4. Bake for 20–25 minutes or until cooked through and browned.
  5. Serve hot with your choice of dipping sauce.
