  • 100 grams turkey strips
  • 3 large carrots
  • 2 ribs celery
  • 1 medium onion
  • 4 cloves garlic
  • 5 cups low sodium chicken broth (or vegetable broth)
  • 1 can diced tomatoes (14 oz)
  • 2 cans white kidney beans (19 oz each)
  • 1 cup ditalini pasta (uncooked)
  • 2 cups chopped spinach or kale
  • Grated Parmesan cheese

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add turkey strips and cook until lightly browned.
  2. Stir in chopped carrots, celery, and onion; sauté until onions are translucent.
  3. Add minced garlic, tomato paste, Italian seasoning, salt, and pepper; cook for an additional minute.
  4. Pour in chicken broth, diced tomatoes, white kidney beans, bay leaf, and Parmesan rind; bring to a simmer and cover for about 10 minutes.
  5. Stir in ditalini pasta; cover again and cook until al dente according to package instructions.
  6. Before serving, add chopped spinach or kale along with grated Parmesan cheese; taste and adjust seasonings if necessary.
