  • 1 lb ground beef
  • 4 cups chicken broth
  • 1 14 oz can crushed tomatoes
  • 1 14 oz can diced tomatoes with juices
  • 3 sticks celery chopped finely
  • 1 medium onion chopped
  • 2 medium carrots peeled & chopped finely
  • 2 teaspoons garlic minced
  • 1 14 oz can red kidney beans drained
  • 1 14 oz can cannellini beans or great northern beans drained
  • 1/2 tablespoon red apple vinegar
  • 1/2 teaspoon Italian seasoning
  • 1/2 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes optional
  • Salt (to taste)
  • Pepper (to taste)
  • 3/4 cup uncooked ditalini pasta

Instructions

  1. In a large soup pot over medium-high heat, brown the ground beef until fully cooked.
  2. Add chopped onions, celery, carrots, and minced garlic. Sauté for 8-10 minutes until softened.
  3. Stir in crushed tomatoes, diced tomatoes, drained beans, chicken broth, red apple vinegar, sugar, Italian seasoning, oregano, basil, and red pepper flakes.
  4. Bring to a boil then reduce heat to simmer for 15-20 minutes.
  5. Add ditalini pasta and continue simmering until the pasta is tender (about 15 minutes).
  6. Adjust seasoning with salt and pepper before serving hot.
