  • 1 pound chicken sausage (mild or spicy)
  • 3 medium carrots (peeled and diced)
  • 1 medium onion (peeled and diced)
  • 23 ribs celery (diced)
  • 1 medium bell pepper (finely chopped)
  • 7 cups low-sodium chicken broth
  • 1 can (14.5 ounces) petite diced tomatoes
  • 1½ cups Ditali pasta (or small pasta)
  • 1½ cups fresh spinach (chopped)

Instructions

  1. In a large pot over medium-high heat, crumble the chicken sausage and cook until browned. Transfer to a plate, leaving some fat in the pot.
  2. Sauté onions, carrots, celery, and bell pepper in the same pot for about 5-7 minutes until softened. Add garlic and seasonings; cook for another minute.
  3. Return the sausage to the pot; add chicken broth and diced tomatoes. Bring to a boil, then reduce heat to low and simmer for 10-15 minutes.
  4. Stir in Ditali pasta and cook until tender, about 10 minutes.
  5. Add spinach just before serving; cook until wilted.
  6. Serve hot, garnished with freshly grated cheese and basil.
