Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp active dry yeast
  • ½ cup granulated sugar
  • ¾ cup lukewarm whole milk
  • 3 large eggs
  • 1 tbsp lemon zest
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Vegetable oil (for frying)
  • 1 cup pastry cream or jam (chocolate, raspberry, or custard)
  • Powdered sugar (for dusting)

Instructions

  1. Activate the yeast by mixing lukewarm milk, sugar, and yeast in a bowl. Let it sit until frothy.
  2. Combine flour, salt, lemon zest, eggs, vanilla extract, and melted butter in a large mixing bowl. Add the yeast mixture and stir until dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth. Let rise in a greased bowl for about 1 to 1.5 hours until doubled.
  4. Roll out the risen dough to about ½-inch thickness and cut into circles using a round cutter.
  5. Heat vegetable oil to 350°F (175°C) in a large pot and fry donuts for about 2-3 minutes per side until golden brown.
  6. Drain excess oil on paper towels and fill each donut with your choice of pastry cream or jam using a piping bag.
  7. Dust generously with powdered sugar before serving.
