  • 8 oz medjool dates, chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 1/4 cup all-purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter for sauce
  • 3/4 cup brown sugar for sauce
  • 1 cup cream for sauce
  • 1 cup milk for sauce
  • 200g dark chocolate for sauce
  • 1/2 tsp salt for sauce

Instructions

  1. Soak chopped dates in boiling water for about 10 minutes.
  2. Preheat oven to 350°F (175°C) and grease a baking dish.
  3. In a bowl, mix softened butter, brown sugar, and vanilla until fluffy. Add eggs one at a time.
  4. In another bowl, sift flour, cocoa powder, baking powder, baking soda, and salt; combine with wet ingredients gradually.
  5. Puree soaked dates and fold into the batter.
  6. Pour into the baking dish and bake for approximately 25 minutes or until set.
  7. While baking, prepare the sauce by melting butter and mixing in brown sugar, cream, milk, dark chocolate, and salt until smooth.
  8. Allow pudding to cool slightly before serving with warm sauce.
