1 cup couscous
1 ¼ cups chicken broth or water
2 boneless skinless chicken breasts
2 tablespoons olive oil (divided)
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 cup cherry tomatoes (halved)
1 cucumber (diced)
½ red onion (finely diced)
1 red bell pepper (diced)
¼ cup fresh parsley (chopped)
2 tablespoons fresh mint (chopped)
1 tablespoon fresh cilantro (chopped, optional)
3 tablespoons olive oil for dressing
2 tablespoons fresh lemon juice
1 clove garlic (minced)
½ teaspoon salt for dressing
¼ teaspoon black pepper for dressing
Instructions
Bring the chicken broth or water to a boil in a pot. Once boiling, stir in the couscous and remove from heat. Cover the pot and let it sit for about 5 minutes until the couscous has absorbed all the liquid. Fluff with a fork.
While the couscous is cooking, season the chicken breasts with paprika, garlic powder, salt, and pepper. Heat 1 tablespoon of olive oil in a grill pan or skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side or until fully cooked. Remove from heat and let rest before slicing.
In a mixing bowl, combine cherry tomatoes, cucumber, red onion, red bell pepper, parsley, mint, and cilantro if using. Toss everything together gently.
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper until well combined.
In a large bowl, combine fluffed couscous with chopped vegetables. Add sliced chicken on top. Drizzle with dressing and toss gently until everything is evenly coated.
