Ingredients

Scale
  • 4 fresh unwaxed oranges
  • 1 cup granulated sugar
  • 1 cup water
  • Pinch of salt
  • 1/2 teaspoon vanilla extract
  • Optional: Spices (cinnamon stick, star anise, cloves)

Instructions

  1. Wash the oranges thoroughly and peel them using a sharp knife, taking care to remove only the outer skin.
  2. Slice the peels into thin strips (about 1/4 inch wide) and place them in cold water.
  3. Bring to a boil and simmer for 10 minutes; drain the water and repeat this process 2-3 times to reduce bitterness.
  4. In the same pot, combine 1 cup sugar and 1 cup water to make syrup. Stir until dissolved and optionally add salt and vanilla extract.
  5. Add the boiled peels into the syrup and cook on low heat for about 45 minutes until translucent.
  6. Transfer to a cooling rack lined with parchment paper to dry for several hours until slightly tacky.
