  • 1/2 cup Greek yogurt
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons almond extract
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups cherries, pitted and quartered
  • 1 tablespoon cornstarch
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8½-inch loaf pan with parchment paper and spray the sides with nonstick baking spray.
  2. In a large bowl, whisk together eggs, Greek yogurt, buttermilk, melted butter, almond extract, vanilla extract, and sugar until well combined.
  3. In another bowl, mix flour, baking powder, and salt. Sift these dry ingredients into the wet mixture and blend until just incorporated.
  4. Toss pitted and quartered cherries in cornstarch before folding them into the batter along with sliced almonds (reserve some for topping).
  5. Pour the batter into your prepared loaf pan. Top with reserved cherries and almonds. Bake for 50 to 60 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before glazing. For the glaze, whisk confectioner’s sugar with almond extract and cream until smooth; drizzle over cooled bread.
