  • 250 grams medium wide rice noodles
  • 250 grams chicken thighs or breast
  • 45 baby bok choy
  • 1 cup holy basil
  • 3 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 2 teaspoons soy sauce
  • 1 tablespoon soy sauce (or substitute for fish sauce)
  • 2 teaspoons brown sugar

Instructions

  1. Cut chicken into thin strips and marinate with soy sauce for 15-20 minutes.
  2. Soak rice noodles in hot water until al dente, then drain.
  3. Clean and chop bok choy and basil.
  4. Mix sauce ingredients in a bowl.
  5. Heat oil in a wok, sear chicken until nearly cooked, then set aside.
  6. Sauté onion, garlic, and chili peppers before adding bok choy.
  7. Stir-fry noodles and chicken with the prepared sauce until well combined.
  8. Serve hot, topped with additional green onion if desired.
