  • 4 pieces  Turkey Bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, diced (adjust for spice)
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark Mexican beef broth
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 Tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 Tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large sauté pan over medium-high heat, cook the  Turkey Bacon until crispy. Remove with a slotted spoon and set aside.
  2. In the same pan, sauté the onion and jalapeno until soft. Add minced garlic and cook until fragrant.
  3. Stir in the beef broth, pinto beans, brown sugar, and spices. Bring to a simmer.
  4. Reduce heat to medium-low and simmer uncovered for about 15 minutes.
  5. Stir in the reserved bacon and lime juice before serving. Garnish with cilantro.
