  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 3/4 cup honey
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tbsp dried lavender
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter until well mixed. Firmly press into the bottom of a springform pan to form an even crust.
  3. In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add honey while continuing to mix.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and dried lavender until fully incorporated.
  5. Pour the filling over the prepared crust in the springform pan and spread evenly. Bake for 45 minutes or until set but slightly jiggly in the center.
  6. Remove from oven, carefully spread sour cream on top, and return to bake for an additional 10 minutes.
  7. Allow cooling completely before refrigerating for at least 4 hours before serving.
