  • 1 cup All-purpose flour
  • 1/2 cup Unsweetened cocoa powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter (melted)
  • 3/4 cup Brown sugar (packed light or dark)
  • 3 Large ripe bananas (mashed)
  • 2 Large eggs (room temperature)
  • 1/2 cup Sour cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 1 cup Semi-sweet chocolate chips (plus a little extra to go on top of batter)
  • 1/4 cup Mini chocolate chips

Instructions

  1. Preheat your oven to 350°F. Prepare a 9×5 loaf pan by spraying it with non-stick baking spray. For easy removal, line the bottom with parchment paper.
  2. In a medium bowl, sift together: All-purpose flour, Unsweetened cocoa powder, Baking soda, Salt. Set this mixture aside.
  3. In a small bowl, mash the three ripe bananas using a fork or potato masher until smooth.
  4. In another medium bowl, whisk together: Melted butter, Brown sugar. Continue mixing until you achieve a thick paste consistency. Add in the mashed bananas, sour cream, and pure vanilla extract. Stir until well combined.
  5. Add eggs one at a time to the wet mixture, mixing thoroughly after each addition. Gradually add in all of the dry ingredient mixture. Mix until just combined; it’s okay if the batter is slightly lumpy. Fold in all semi-sweet chocolate chips.
  6. Pour the batter into your prepared loaf pan, filling it about three-quarters full. If you have extra batter, consider using it in a muffin pan. Sprinkle additional mini chocolate chips on top.
  7. Bake in your preheated oven for 50-60 minutes or until a toothpick inserted comes out clean. Allow it to sit in the pan for 10 minutes before transferring to a cooling rack. Let it cool completely before slicing.
