  • 8 oz ditalini pasta
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup sliced black olives
  • 1/4 cup fresh parsley, chopped
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp white apple vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook the ditalini pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and parsley.
  3. In another bowl, whisk together mayonnaise, sour cream, white apple vinegar, Dijon mustard, sugar, garlic powder, salt, and black pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss gently to coat evenly.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
