  • 4 tablespoons melted butter
  • 16 oz cream cheese
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup sour cream
  • 8 oz dark chocolate
  • 1 ½ cups cherries
  • ¼ cup granulated sugar (for compote)
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Prepare the cherry compote by simmering cherries with sugar and water until softened. Thicken with cornstarch slurry and cool.
  2. Mix chocolate cookie crumbs, melted butter, and sugar. Press into a springform pan and bake for 10 minutes.
  3. Beat cream cheese until smooth; mix in sugars, sour cream, and vanilla. Blend in melted dark chocolate and eggs.
  4. Layer half the cheesecake batter over the crust, dollop half of the cherry compote on top, and swirl gently. Repeat.
  5. Bake in a water bath for 50-60 minutes until edges are set but center jiggles slightly.
  6. Cool at room temperature then refrigerate for at least 6 hours before serving.
