  • 1 1/4 lbs Chicken breast (diced small)
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy-free butter
  • 2 cups dairy-free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy-free parmesan (shredded)
  • 2 cup chicken broth
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 2/3 tbsp gluten free 1:1 flour
  • 2 tbsp pasta water (as needed)

Instructions

  1. Boil the gluten-free farfalle in a large pot of water until al dente, then drain, reserving some pasta water.
  2. In a mixing bowl, season diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt.
  3. Heat olive oil in a skillet over medium heat and sear the seasoned chicken until cooked through (165°F). Set aside.
  4. In the same skillet, melt dairy-free butter and sauté minced onion with seasonings for about one minute.
  5. Stir in gluten-free flour, then add chicken broth and dairy-free heavy cream. Mix in chopped spinach and simmer until thickened.
  6. Incorporate shredded dairy-free parmesan until melted and creamy.
  7. Toss cooked pasta into the sauce mixture; if necessary, adjust consistency with reserved pasta water.
  8. Fold in the seared chicken, serve hot, and enjoy!
