  • 1 lb lamb, thinly sliced
  • 2 tablespoons whole cumin seeds
  • 2 teaspoons sichuan peppercorns
  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar (or dry apple juice)
  • 1 teaspoon salt
  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil (and more to taste)
  • 3 tablespoons chinkiang vinegar
  • 8 cloves garlic (minced)
  • 2 inches ginger (minced)
  • 1 red onion (thinly sliced)
  • 1 hot green chili (sliced)
  • 1/2 bunch cilantro (chopped)

Instructions

  1. Prepare your ingredients and set a pot of water to boil for the noodles.
  2. Marinate the lamb with spices, apple vinegar, salt, peanut oil, and cornstarch for at least 10 minutes.
  3. Cook the noodles until they float; drain and set aside.
  4. In a hot pan or wok, stir-fry garlic, ginger, and onion until fragrant.
  5. Add marinated lamb and cook through before mixing in chili oil and sauces.
  6. Toss in cooked noodles until well combined; serve garnished with sliced green chili and cilantro.
