  • 1 pound cubed beef
  • 4 cups low-sodium beef broth
  • 2 large carrots, chopped
  • 2 ribs celery, chopped
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 cup green beans, chopped
  • 1 pound potatoes, chopped
  • 1 tablespoon oil
  • 2 tablespoons tomato paste
  • 1½ teaspoons salt
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika
  • ¼ teaspoon pepper
  • ¾ cup marinara sauce
  • ½ cup canned or frozen corn
  • 1 bay leaf

Instructions

  1. Heat oil in a skillet over medium-high heat and brown the beef on all sides. Transfer to a slow cooker.
  2. In the same skillet, sauté carrots, celery, and onion until softened. Add garlic and tomato paste; cook for an additional minute.
  3. Transfer the vegetable mixture to the slow cooker along with beef broth, potatoes, diced tomatoes (with juice), green beans, marinara sauce, corn, and bay leaf.
  4. Cover and cook on low for 7 to 8 hours until beef and vegetables are tender. Discard the bay leaf before serving.
