Instructions

  1. Heat olive oil in a skillet over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles; drain excess grease.
  2. Sauté diced onion in the same skillet for 3–4 minutes until softened, then stir in minced garlic and cook for an additional 30 seconds.
  3. Transfer the sausage mixture along with diced potatoes, chicken broth, salt, pepper, and thyme into a crockpot.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the potatoes are fork-tender.
  5. Stir in heavy cream and optional shredded cheese; cover again and warm for another 15–20 minutes without boiling.
