Scale
  • 4 boneless skinless chicken breasts (about 2 lbs)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Season chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and paprika.
  2. Optionally, sear the chicken in olive oil in a skillet over medium heat for about 2–3 minutes on each side until lightly browned.
  3. Place seasoned chicken in the crockpot in a single layer.
  4. In a bowl, whisk together chicken broth and cream of chicken soup until combined; pour over the chicken.
  5. Cover and cook on low for about 6 hours or high for about 3 hours.
  6. About 30 minutes before serving, mix cornstarch with water until smooth and stir into the crockpot to thicken the gravy.
  7. Shred the chicken if desired or serve whole; garnish with fresh parsley before serving.
