  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 pound ribeye steak or sirloin, thinly sliced (or ground beef)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded provolone cheese
  • 1 cup beef broth (or water)
  • Olive oil for browning

Instructions

  1. In a large skillet, heat olive oil over medium-high heat and brown the beef until cooked through. Season with salt, pepper, garlic powder, and onion powder.
  2. Slice the onions and bell peppers while the beef cooks.
  3. Layer half of the potatoes in the slow cooker followed by half of the cooked beef, onions, peppers, and cheese. Repeat these layers.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth; pour over the layered ingredients.
  5. Cook on low for 6 hours or high for 3 hours. Add remaining cheese during the last 30 minutes of cooking.
  6. Stir gently before serving hot.
