  • 1 medium onion
  • 3 medium bell peppers
  • 1 cup uncooked rice (or quinoa)
  • 28 oz can diced tomatoes
  • 4 cups beef broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Dice the onion and bell peppers. Measure out the rice or quinoa.
  2. In a skillet over medium heat, brown the ground meat until fully cooked; drain any excess fat.
  3. Add the browned meat, diced onion, bell peppers, uncooked rice, diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper to the slow cooker. Stir to combine.
  4. Cover and cook on low for about 6 hours or on high for about 3 hours.
  5. Stir well before serving and top with shredded cheese, sour cream, and fresh herbs as desired.
