- 1 pound Ground Beef (browned and drained)
- 3 Medium Russet Potatoes (peeled and diced into large pieces)
- 4 Medium Carrots (peeled and cut into ½ thick slices)
- 1 Medium Onion (diced)
- 1 can Diced Tomatoes (14 oz can)
- 2 cups Beef Broth
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 teaspoons Italian Seasoning
- 1 teaspoon Onion Powder
- 2 teaspoons Minced Garlic
- Begin by browning the ground beef in a skillet. Drain excess fat for a leaner stew.
- Peel and dice the potatoes into large pieces. Peel and slice the carrots into ½ thick rounds. Dice the onion.
- Add the browned ground beef, potatoes, carrots, and onions to your slow cooker.
- In a mixing bowl, stir together the diced tomatoes, beef broth, salt, pepper, Italian seasoning, onion powder, and minced garlic until well mixed.
