  • 1 lb Ground Beef
  • 1/2 Onion (Diced)
  • 2 Medium Carrots (Diced)
  • 3 Celery Stalks (Diced)
  • 1 Tbsp Minced Garlic
  • 3 cans Tomato Sauce (8 oz.)
  • 1 can Diced Tomatoes (15 oz.)
  • 1 can Dark Red Kidney Beans (drained and rinsed)
  • 1 can Great Northern Beans (drained and rinsed)
  • 6 cups Chicken Broth
  • 1 cup Dry Ditallini Pasta
  • 3 tsp Italian Seasonings
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Brown the ground beef in a large skillet over medium heat until fully cooked. Drain excess grease.
  2. Transfer the cooked beef to a crock pot and add diced onion, carrots, celery, minced garlic, tomato sauce, diced tomatoes, both types of beans, chicken broth, and seasonings.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. In the last 30 minutes of cooking on low or just before serving on high, stir in the dry ditallini pasta.
  5. Serve hot with fresh parsley and shredded parmesan cheese on top.
