  • 2 large eggs
  • 1/4 cup grated parmesan cheese (plus more for topping)
  • 16 oz shredded mozzarella cheese
  • 48 oz marinara sauce
  • 12 oz gluten-free penne pasta
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/4 teaspoon pepper

Instructions

  1. Spray the slow cooker insert with non-stick spray.
  2. In a mixing bowl, combine ricotta, eggs, parmesan, basil, salt, and pepper until well blended.
  3. Spread a layer of marinara sauce at the bottom of the slow cooker.
  4. Add a layer of gluten-free penne followed by scoops of the ricotta mixture and a sprinkle of mozzarella.
  5. Repeat layers until all ingredients are used, finishing with marinara sauce topped with mozzarella and additional parmesan.
  6. Cook on high for 2 ½ hours until bubbly and heated through.
