  • ½ cup packed light brown sugar
  • ½ cup white sugar

  • 1 teaspoon vanilla extract

  • 1¼ cups all-purpose flour

  • 2 cups coconut flakes (divided)
  • ½ cup toffee bits or raw coarse sugar

  5. Fold in 1½ cups of coconut flakes; reserve the remaining for rolling.
  6. Form dough balls using a scoop and roll in reserved coconut flakes.
  7. Place on prepared sheets, spaced apart.
  8. Bake for 12-16 minutes until golden brown.
  9. Immediately top with toffee bits or coarse sugar and return to the oven for an additional 2-3 minutes.
