  • 1/8 tsp salt
  • 2 eggs
  • ½ tsp vanilla extract
  • ¾ cup whole milk
  • ½ cup water
  • 3 tbsp unsalted butter
  • ½ cup castor sugar (for sauce)
  • ¾ cup orange juice
  • Thinly sliced orange peel
  • 1/3 cup fruit juice (as an alternative to liqueur)

Instructions

  1. In a mixing bowl, whisk together the flour, granulated sugar, and salt. Add eggs one at a time until smooth. Gradually mix in milk and water until lump-free; stir in vanilla extract and melted butter.
  2. Heat a non-stick skillet over medium heat, lightly greased with butter or oil. Pour about ¼ cup of batter into the skillet, tilting to spread evenly. Cook for 1-2 minutes until edges lift; flip and cook another minute until golden brown. Repeat with remaining batter.
  3. For the orange sauce, melt castor sugar in a clean skillet over medium heat until caramelized (not burnt). Add unsalted butter and stir until melted. Mix in sliced orange peel and orange juice; simmer for about 5 minutes until slightly thickened.
  4. Fold each crepe into quarters and coat them in the orange sauce before serving.
