  • 1 lb chicken breast or thighs
  • 12 oz rigatoni pasta
  • 4 oz cream cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt & black pepper, to taste

Instructions

  1. Cook rigatoni in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a skillet, heat olive oil and butter over medium-high heat. Season chicken with Cajun seasoning and sear until golden brown. Remove from skillet.
  3. Melt butter in the same skillet and sauté garlic for 30 seconds. Stir in heavy cream and milk; whisk until smooth.
  4. Add cream cheese and cheeses to the sauce, mixing until melted. Adjust thickness with reserved pasta water if necessary.
  5. Toss rigatoni into the sauce to coat evenly and return seared chicken to the skillet.
  6. Garnish with chopped parsley before serving hot.
