  • 1 tablespoon olive oil
  • 1 lb chicken or beef sausage
  • 3 cups mirepoix (celery, carrots, onion)
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • 3 heaping tablespoons sun-dried tomatoes, chopped
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 1 tablespoon flour
  • 4 cups low-sodium chicken stock
  • 1 14.5oz can crushed tomatoes
  • 10oz cheese tortellini
  • 4 cups spinach, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese + more for serving
  • Fresh basil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Set aside.
  2. In the same pot, add mirepoix and sauté until softened. Stir in garlic, thyme, sun-dried tomatoes, and seasonings; cook briefly.
  3. Pour in chicken stock and crushed tomatoes; bring to a boil then simmer for 5-10 minutes.
  4. Add tortellini and white beans; cook until tortellini float.
  5. Stir in cooked sausage, spinach, cream, and Parmesan cheese. Serve hot with fresh basil and additional cheese.
