  • 1 lb chicken, peeled and diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook spaghetti or fettuccine according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  3. Add chicken to the skillet, seasoning with salt and pepper. Cook until pink and opaque (3-4 minutes), then remove from skillet.
  4. In the same skillet, combine sun-dried tomatoes and heavy cream; bring to a simmer.
  5. Stir in chopped spinach and cook until wilted (about 2 minutes).
  6. Return chicken to the skillet and mix in Parmesan until melted.
  7. Toss cooked pasta into the skillet with the sauce until well coated.
  8. Serve immediately, garnished with fresh basil.
