  • 2 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 lb turkey or chicken sausage, crumbled (without casings)
  • 4 garlic cloves, minced
  • 6 oz spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese, shredded
  • 1/4 teaspoon salt
  • 8 oz farfalle pasta

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  2. Meanwhile, boil salted water in a large pot. Cook farfalle pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, cook crumbled sausage until browned (about 5-7 minutes). Add minced garlic; sauté for another minute.
  4. Stir in spinach until wilted. Combine roasted butternut squash and cooked pasta into the skillet.
  5. Pour in heavy cream and Parmesan cheese; mix well and adjust seasoning as needed.
