  • 1 lb boneless, skinless chicken breasts
  • 12 oz linguine pasta
  • 1 cup heavy cream
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese (for topping and sauce)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken until golden brown and cooked through. Top with Parmesan during the last minute to melt.
  3. Cook linguine in salted boiling water until al dente. Reserve pasta water before draining.
  4. In the same skillet, melt remaining butter and sauté minced garlic for about 30 seconds.
  5. Pour in heavy cream; bring to a simmer and stir in Velveeta until melted.
  6. Add mozzarella cheese and remaining Parmesan; stir until thickened. Adjust with reserved pasta water if needed.
  7. Toss cooked linguine into the sauce until well coated. Simmer briefly to meld flavors.
  8. Serve by plating the creamy linguine alongside the seared chicken.
