  • 450g chicken sausage (or turkey)
  • 1 onion
  • 5 garlic cloves
  • 2 tablespoons tomato paste
  • 28 oz canned tomatoes
  • 4 cups beef broth (or vegetable broth)
  • 1 cup heavy cream
  • 810 sheets of lasagna noodles
  • Fresh herbs: parsley, oregano, basil
  • Cheese topping: ricotta, mozzarella, parmesan

Instructions

  1. Dice the onion and mince the garlic; set aside.
  2. In a large pot over medium heat, cook the chicken sausage until browned. Remove and set aside.
  3. In the same pot, sauté onions until translucent. Add garlic and red pepper flakes; cook until fragrant.
  4. Stir in tomato paste and cook briefly before adding canned tomatoes; break apart as they bubble.
  5. Pour in the broth and bring to a boil. Season to taste.
  6. Break lasagna sheets into pieces and add them to the boiling soup; stir occasionally.
  7. Once noodles are nearly cooked, mix in heavy cream and return to a gentle simmer.
  8. Add back the cooked sausage along with minced herbs; adjust seasonings if needed.
  9. Prepare cheese topping by mixing ricotta, mozzarella, and parmesan in a bowl.
  10. Serve soup in bowls topped with cheese mixture and extra herbs if desired.
