  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, Parmesan cheese, breadcrumbs, chopped parsley, egg, minced garlic, oregano, salt, and pepper. Mix well and roll into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs for about 5-7 minutes; then remove them from the pot and set aside.
  3. In the same pot, sauté chopped onion, carrot, and celery for about 5 minutes until softened. Add minced garlic and cook for another minute.
  4. Stir in diced tomatoes and chicken broth; bring to a simmer.
  5. Return meatballs to the pot and let simmer for 15-20 minutes until cooked through.
  6. Stir in heavy cream along with basil, oregano, salt, and pepper; simmer for an additional 5 minutes.
  7. Serve warm garnished with fresh parsley.
