  • 1 ½ lb chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 4 garlic cloves
  • 8 cups chicken broth (low sodium)
  • 1 cup uncooked wild rice (rinsed)
  • ¼ cup flour (gluten-free optional)
  • ½ cup half-and-half
  • ½ cup whole milk
  • 1 bay leaf
  • 1 Tbsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Dice the onion, chop the carrots and celery, and mince the garlic.
  2. Layer the chicken at the bottom of the slow cooker. Add garlic and seasonings on top.
  3. Add chopped vegetables followed by broth and rinsed wild rice. Toss in a bay leaf.
  4. Cover and cook on low for 6-8 hours until rice is tender.
  5. Shred cooked chicken and return it to the soup.
  6. Whisk together flour, half-and-half, and milk; stir into soup until combined. Adjust consistency with more broth if needed.
  7. Serve warm with crusty bread or garnished with fresh herbs.
