1 teaspoon garlic powder

1/2 cup Greek yogurt
2 tablespoons fresh lemon juice
1 garlic clove, minced
2–3 tablespoons olive oil
2 cups cooked rice or quinoa
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh parsley or dill, chopped

Instructions
Heat olive oil in a skillet over medium heat. Season cubed chicken with smoked paprika, cumin, garlic powder, salt, and pepper. Cook until golden brown and fully cooked (7-10 minutes).
