  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • Salt to taste
  • 3 tbsp unsalted butter
  • 1 onion, finely chopped
  • 5 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1 tsp chili powder
  • 1 cup tomato puree
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tsp sugar (optional)
  • Fresh cilantro for garnish
  • Potatoes for hand-cut fries

Instructions

  1. Marinate the chicken in yogurt, lemon juice, ground cumin, garam masala, turmeric, smoked paprika, and salt for at least 30 minutes or overnight.
  2. In a large skillet over medium heat, melt unsalted butter. Add the marinated chicken; cook until golden brown, about 5-7 minutes per side. Remove from skillet.
  3. In the same skillet, sauté the chopped onion until translucent. Add minced garlic and grated ginger; cook until fragrant.
  4. Stir in chili powder and tomato puree; simmer for about 10 minutes.
  5. Lower the heat and stir in heavy cream. Season with salt, pepper, and sugar if desired. Simmer until well combined.
  6. Return the cooked chicken to the skillet; stir to coat in the sauce and simmer for an additional 5 minutes.
  7. Prepare hand-cut fries by peeling and cutting potatoes, soaking briefly in water, and frying until golden.
